Garlic Fries

1. Cut potatoes into 0.5-cm (¼-in) strips. Wash well under cold water before draining.

2. Parboil potatoes until just soft but not falling apart. Drain well and chill in the refrigerator for 1 hour.

3. Heat oil in a deep fryer to 120°C (250°F).

4. Fry potato strips until golden. Leave to cool before chilling in the refrigerator for another hour.

5. Heat oil to 180°C (350°F).

6. Mix chips with garlic and parsley.

7. Fry chips until it is crispy and golden. Season with salt and serve alongside fish fillets.
